I would say the Night Bazaar in Chiang Mai is a must see. There is a lot of activity around the market and you can people watch if you aren't interested in shopping. You really can buy almost anything. Yes it is touristy and yes they sell a lot of junk along side the genuine Thai articles, but it's fun nonetheless. Be sure to bargain as there are some good deals and some not-so-good deals. In spite of my determination not to buy anything from the market, I ended up returning with a lamp that looks quite nice on the night stand next to my bed.
